So utilitarian. Raw, roasted, kvass, grated, hunked, cubed, squeezed, red, golden, greens, sweet, spiced. Beets, you have an eternal pass to my plate. See you there.
Fresh Beet Slaw
3 beets of varying colors
1 carrot
1 zucchini
1/4 cup yogurt (preferably homemade and raw, but delicious with store-bought!)
juice from 1/2 a lemon
plenty of salt and pepper
1/2 t. ground cumin, quickly toasted
Peel and very finely julienne the beets, carrot and zucchini–or use a mandolin. Gather the cut zucchini in a dish towel and squeeze out excess water. Combine all ingredients in a large bowl. Taste, adjust seasonings if needed. Allow flavors to marry for at least an hour in the refrigerator if you have the time. Serves 4.
