Ingredients
1.5lbswhite potatoescut into 1 inch pieces and skins on
1.5lbsorange carrotscut into 1 inch pieces and skins on
1/4cupcoconut cream
1/4cupchicken brothor water
2teaspoonssea salt
1teaspoonblack pepper
Instructions
Steam the potatoes and carrots together in a large pot for 20 minutes or until tender. Remove from the steamer basket into a bowl, discarding the steaming liquid.
To the potato and carrot mash, add the coconut cream, chicken broth, sea salt and black pepper. Mash with a potato masher for a rustic consistency, or use an immersion blender for a smoother mash.
