Carrot Potato Mash

A simple yet flavorful side dish, this Carrot Potato Mash is an amazing side to pair with any protein!

Ingredients

  • 1.5 lbs white potatoes cut into 1 inch pieces and skins on
  • 1.5 lbs orange carrots cut into 1 inch pieces and skins on
  • 1/4 cup coconut cream
  • 1/4 cup chicken broth or water
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper

Instructions

  1. Steam the potatoes and carrots together in a large pot for 20 minutes or until tender. Remove from the steamer basket into a bowl, discarding the steaming liquid.
  2. To the potato and carrot mash, add the coconut cream, chicken broth, sea salt and black pepper. Mash with a potato masher for a rustic consistency, or use an immersion blender for a smoother mash.
  3. Adjust seasonings if needed!
