Golden Beet Slaw

Ready to boost your upper digestion? Coriander and raw beets are the superheros of this dish, and shh... anyone will like this combo, regardless of digestive need!

Ingredients

  • 1 large golden beet or two medium size beets, peeled and grated
  • 1 medium green apple cored, and thinly sliced
  • 1/2 medium red onion peeled and thinly sliced
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon ground coriander seed
  • sea salt to taste
  • black pepper to taste

Instructions

  1. Soak the sliced onions in the bottom of a large bowl with the lemon juice while assembling all the other ingredients.

  2. Grate the beets, slice the apples and throw it all together in the large bowl over the sliced onions. Add the olive oil and coriander seed, toss, and taste. Adjust the seasoning using sea salt and black pepper.
