Fragrant Curry Powder

Fragrant Curry Powder (adapted from Mark Bittman's "How to Cook Everything: Vegetarian")

Ingredients

  • 1/8 th teaspoon freshly grated nutmeg
  • seeds from 6 cardamom pods
  • 4 cloves
  • one 3-inch cinnamon stick
  • 1.5 teaspoons black peppercorns
  • 2 tablespoons cumin seeds
  • 1/4 cup coriander seeds
  • 2 bay leaves
  • 2 dried curry leaves if available
  • 1 teaspoon turmeric powder

Instructions

  1. Place all ingredients except turmeric powder in skillet over medium heat.
  2. Toast spices for a few minutes until lightly browned.
  3. Remove from heat.
  4. Cool, combine with turmeric powder and grind using a spice or coffee grinder.
  5. Stores well in a dark cupboard. Makes approximately 1/4 cup.
