Sunflower Seed Chocolate Cake

Ingredients

  • 1 egg
  • 1/2 c. honey
  • 1/4 c. butter or coconut oil melted
  • 1 c. toasted sunflower seeds preferably "crispy", i.e. sprouted then dried, finely ground
  • 1/2 t. baking soda
  • 1/2 c. cocoa powder
  • 1/2 t. sea salt
  • 1/2 t. ground cinnamon

Instructions

  1. Preheat oven to 350 degrees. Butter a 3 x 5 inch mini bread loaf pan.
  2. Combine egg, honey and butter in mixing bowl.
  3. Add remaining ingredients and stir until combined.
  4. Place cake batter in loaf pan, then bake for 25-30 minutes.
  5. Consider frosting, or just take fork to steaming cake. Serves two.
